Mānuka leaves are small and spiky. They taste somewhat floral and also bitter depending on how they are prepared. Regardless of their sharp and hard appearance they are very versatile.
A wide variety of mānuka tree chemotypes exist throughout New Zealand. This means that the leaves of the mānuka tree vary in flavour and unique properties. Some chemotypes are suited better to herbal tea and food applications more than others.
Traditionally mānuka is a highly valued plant within Māori tradition. It was used for treating and healing variety of sicknesses. These included, treating head colds, taken as a relaxant before going to sleep, as a mouthwash, to treat gum disease, reducing inflammation, alleviating colic and more.
